How does water travel up from the roots of a plant?

We have been wondering how water travels up from the roots. So we decided to try and find out how.  First we had to design an experiment.

   

We placed some celery in a glass of coloured water and waited. After a while we noticed that coloured lines started appearing on the plant, from the bottom working their way to the top.

 

We pulled the celery apart and found out that there were tubes inside the plant and that these must carry the water.
